I want to bake cookies for the holidays any suggestions?

How can I make homemade cookies that are not complicated but are easy to make. Do you know of any good sugar cookie recipes and how to make icing for the cookies as well? I never cut out shapes with a rolling pin before it is hard? I want to give the cookies as gifts as a personal touch. Thank you in advance for sharing your recipes. Happy Holidays.
